I have been making Oatmeal Carmelitas for years from a recipe a friend gave me. Recently, I decided that the buttery taste produced by four sticks of butter was just not enough. So I made a substitution – instead of the dulce de leche the recipe called for, I tried butterscotch sauce. The result is devine – I didn’t really think the Carmelita recipe could be improved upon, but this gave me pause for thought.
